Wonderful Grilled Potato Salad

Just came across this delicious recipe which uses just a few ingredients, and is simple to put together. Had some friends over last night and they all loved it:


For the Grill...
2 pounds new red potatoes
1 large sweet red bell pepper, quartered
(coat the potatoes and pepper with olive oil, season lightly with salt and pepper)

For the Dressing...
1/2 cup extra virgin olive oil
1/4 cup freshly grated parmesan cheese
1/2 teaspoon white pepper.
4 green onions, with tops, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon kosher salt


Grill the potatoes and red bell pepper sections until done. Combine the extra virgin olive oil, parmesan cheese, and white pepper to make the dressing.
Cut the grilled new potatoes and pepper sections into bite-sized pieces, then combine with the parmesan dressing, parsley, green onions and salt. For a good looking presentation, arrange parsley, green onions and pieces of red pepper on top.

Grilled potato salad tastes really good when served with honey glazed grilled salmon or with smoky herbed chicken thighs.
