Warm Spinach and Tuna Salad

Quick and easy, delicious and nutritious



Prep Time: 10 minutes

Ingredients:

6 cups baby spinach
Small can of light tuna in brine
1 TBS extra virgin cold-pressed olive oil
Fresh lemon juice - to taste
1 garlic clove
sea salt and pepper
1/2 medium tomato or several cherry tomatoes - diced

Directions:

Combine olive oil, lemon juice, garlic, and salt and pepper and warm in a small pan.
Drizzle the warm sause over washed spinach leaves and top with tuna and tomatoes.

Serves 1

Another Great Fall Back

This is another great meal to make when you have little time and not much inspiration. Always delicious and having it with spinach adds something to the dish. Warm sauce makes it much more satisfying somehow.
